15 Minute Chicken, Broccoli and Pineapple Stir-Fry
Instructions
Step 1
Prepare rice according to package directions.
Step 2
Heat oil in a large pan or wok over medium-high heat.
Step 3
Add chicken; stir-fry for 5-7 minutes or until no longer pink and starting to brown.
Step 4
Add broccoli, onion, garlic and ginger to the pan; stir-fry for 3-5 minutes.
Step 5
Combine reserved pineapple juice, soy sauce, stir-fry sauce and cornstarch in a small bowl; Add to pan. Bring to a boil, stirring constantly. Then add pineapple chunks.
Step 6
Reduce heat to low and simmer for 2-3 minutes until the sauce has thickened.
Step 7
Serve stir-fry over rice.
