20 Minute Crispy Ground Pork and Rice
Instructions
Step 1
Prepare rice according to package directions. Toss cucumbers with 1/4 cup rice wine vinegar; let stand for 5 to 10 minutes or until lightly pickled.
Step 2
Meanwhile, heat oil in a large pan set over high heat; cook ground pork, shallots and garlic for 5 to 8 minutes or until pork begins to brown.
Step 3
Stir in 1/4 cup water, soy sauce, brown sugar, fish sauce and remaining rice wine vinegar.
Step 4
Cook for 5 to 8 minutes or until the pork is crispy, cooked through, and the sauce is thickened and sticky.
Step 5
Serve pork over rice and pickled cucumbers; garnish with fresh herbs.
