20 Minute Leftover Turkey Soup
Instructions
Step 1
Prepare rice according to package directions.
Step 2
Melt butter in a large saucepan set over medium heat.
Step 3
Sauté carrots, celery, onions, garlic, sage, salt and pepper for 3 to 5 minutes, or until softened.
Step 4
Stir in broth and bay leaves and bring to a boil. Stir in turkey and gravy. Reduce heat to medium-low and simmer for 10 to 15 minutes, or until veggies are tender.
Step 5
Stir in rice and peas. Cook for 3 to 5 minutes, or until rice is heated through and peas are cooked.
Step 6
Remove bay leaves. Serve soup with baguette slices, if using.
Leftover Turkey Ideas

Break the carcass apart into smaller pieces and cover it with water. Add salt to taste and let it simmer for 1 1/2 to 2 hours or until the broth is flavourful.
