15 Minute Shrimp Jambalaya
Instructions
Step 1
Heat butter in a large pan set over medium heat.
Step 2
Add onion and green pepper and sauté for 3-4 minutes, until lightly browned.

Add shrimp and ham to pan. Cook until ham is lightly browned and shrimp are pink.
Step 4
Drain tomatoes, measuring juice. Add water to juice to equal 1 1/2 cups of liquid.
Step 5
Add liquid, tomatoes, parsley, salt, sugar, thyme and bay leaf to pan.
Step 6
Cover and simmer for 5 minutes. Stir in rice, cover and simmer for 5 additional minutes.
Step 7
Remove bay leaf and serve.
