Step 1
Melt butter in a large saucepan over medium heat. Sauté onion, ginger and garlic for 3 to 5 minutes, or until starting to soften.
Step 2
Stir in turmeric, salt, pepper and curry powder. Cook for 1 to 2 minutes, or until fragrant.
Step 3
Stir in coconut milk and water and bring to a boil. Stir in rice. Cover and remove from heat. Let stand for about 5 minutes, or until liquid is absorbed and rice is tender.
Step 4
Fluff rice with a fork. Sprinkle with cashews and cilantro.
